Description & History

The walnut tree dates back to 7,000 B.C. and has been cultivated ever since. Through archeological finds, we know that walnut trees grew wild over a great portion of Europe and Asia. Although their exact origins are undetermined, most authorities believe the walnut first came from ancient Persia. Passed along in trade from Persia, walnuts became a treasured delicacy to the ancient peoples of Italy, Spain, Greece, India, China and Japan.

Walnuts were first introduced to California in the 1700s by the Spanish padres. It wasn't until the 1860s, however, that the commercial hazelnut industry was launched with the pioneering work of nurseryman Joseph Sexton, known as the father of the commercial walnut industry. Through selective breeding, Sexton focused on three varieties which showed the greatest potential. Word of his developments spread and others planted the superior trees. By the 1880's, the California walnut industry was on its way. Today, California produces all of the walnuts grown commercially in the United States and about two&ndash:thirds of the world's trade.

Walnuts are available as Halves & Pieces, Medium Pieces, Small Pieces, and Nuggets. They are also graded according to color.

Uses

Walnuts are a delicious addition to sweet and savory products alike. In baked goods, walnuts add a nutty bite to brownies, cookies, breads and muffins. Savory dishes such as grains, stuffing, salad and stir&ndash:fries can also benefit from the walnut's distinctive flavor and soft crunch.

Nutrition

Walnuts are an excellent source of phosphorus, zinc, copper, and thiamin and are a good source of iron and potassium. Walnuts are also high in healthy, monounsaturated fats, which have been shown to lower the risk of heart problems.
